This Appendix presents the evidence base surrounding a protein transition in a list of numbered statements structured into three main sections. Each statement is organised as follows: the numbered sections provide a synthesis of the relevant scientific evidence, and the lettered subsections o@er detailed information and supporting references for each piece of evidence. It starts with a background section covering what proteins are and why they are needed, as well as a short historical perspective on the focus on protein. The second section focuses on the social, political, occupational health and economic contexts currently shaping the protein transition landscape in the EU. Finally, the last section focuses on the impacts of a protein transition on various sustainability dimensions including human health, environment, animal health and welfare, and the economy. The terms that are used in this Restatement are defined in Box1 in the main paper. Throughout this Restatement, footnotes are used to explain or clarify technical terms that are highlighted in red.
