Abstract
Prebiotic vegetables modulate gut microbiota, therefore they can be used to prevent and decrease obesity. A behavioural epidemiological assessment of prebiotic vegetable consumption was therefore conducted, focusing on individual and environmental determinants. First, the prevalence of prebiotic vegetable consumption was assessed and its individual determinants were identified in two correlational studies. These individual determinants were targeted in a dietary intervention. Environmental determinants were identified by a systematic review and meta-analysis on the efficacy of nudging on fruit and vegetable choice. Both the individual and environmental determinants that were identified in the previous studies were targeted in three nudging interventions implemented in university restaurants. Finally, a qualitative study investigated the subjective experience of vegetable consumption in a sample of obese patients to complement the theoretical models.
