Abstract
Carotenoids extraction techniques from crude palm oil and palm oil by-products as reported in numerous papers and patents over the last 45 years have been reviewed. After a brief description of palm oil characteristics and beta-carotene biological functions, the physical and chemical properties of beta-carotene are reported in order to explain, on a physical basis, the various possibilites of isolation which will be studied in the second part.
