Description of the topic: Sotolon is a powerful aroma in Madeira and Jura wines. Our laboratory also evidenced the presence of its ethyl analog, abhexon, in aged Sauternes wines. The present research focus on their occurrence in beers exhibiting the famous Madeira off-flavour. Materials and methods: Commercial Belgian beers stored under various conditions were analyzed by sensorial analyses, GC-MS and GC-O. Results: No trace of sotolon and abhexon was found in fresh beer, whatever the type. On the other hand, 3 months of storage revealed sufficient to increase the concentrations above the threshold value. Very high levels were found in a 7-years refermented beer exhaling flavours very close to that found in the famous Vin Jaune. Discussion: Our data shows for the first time the key-role of sotolon in the “Madeira” beer off-flavour. Issued from the condensation of acetaldehyde and alpha-ketobutyric acid, proposals are given to avoid sotolon in beer.
